Ciao,
I’m Chef Alfredo de Bonis. Let me tell you a little
about my culinary tours of Italy. It all started in
1966 when I was sent to study in Milano. My classes
were in Medieval & Renaissance history. While in
Italy I had the great fortune to meet a wonderful
family in Rome, the Alimandi’s. It was here during
my school breaks and summers that I would spend a
great deal of time in Mama Alimandi’s kitchen. As
the Romans say, I stole my work with my eyes. I
watched Signora Dina at work and learned to love
cooking, especially Roman cooking.
So now, with my Cucina & Cultura Trips, I can
combine my two great loves, history & cooking, and
share them with you. I designed these trips to be
both informative and relaxing. Since the group is
limited to 10, I am able to give personalized
service to the class both in the kitchen & on tours.
I am fluent in Italian, so there is never a
communication problem.
The classes are held in Mama Alimandi’s kitchen.
Although she is no longer with us, her spirit
remains in the kitchen. The hotel that she founded
in 1950 is now run by her children.
A typical day in Rome will start with a buffet
breakfast in the Alimandi Roof Garden, which
overlooks the Vatican. As a group we will proceed to
Rome’s largest open air market just 2 blocks away
for daily shopping or stop by Pico’s Pasta factory
to watch various pastas being made. Classes start
around 10am. Classes are "hands on" so that each
student can participate in the preparations. Lunch
follows at around 12:30. After lunch, on certain
days, we will tour St. Peter’s Basilica or the
Vatican Museums. Other days will be free for you to
explore as you wish. Each night I have a different
dining experience waiting for you at some of Rome’s
finest restaurants.
The week tour in Tuscany & Umbria is full of
excellent food & wine adventures. We will visit the
Castello Banfi, home of the Brunello wine, the Badia
a Coltibuono for a unforgettable lunch and while in
Florence be treated to a dinner personally designed
and cooked by Florence’s premiere chef, Giuseppe
Alessi. Or the group can go for a week on the Amalfi
coast.
